As a young girl, I watched my mother Paulette Henry create astonishing and celebrated events for over 20 years, as the Owner and Executive Design Specialist for her own Floral and Event Design company in Montego Bay Jamaica. This led me to explore my own creative side, and I began to delve into my true nature and passion for events.

A South Florida native, Chef Myriam “Mimi” Charles began her culinary journey from a young age. Being a first generation Haitian-American, inspiration came from watching her mother in the kitchen preparing traditional Haitian dishes and pastries. It is the merging of Chef Mimi’s heritage and culinary training that form her unique style of cooking and baking.
Chef Mimi has over 30 years of combined culinary experience. She began her formal culinary training at Le Cordon Bleu in Atlanta, GA. After graduating in 2004, she then worked at a 5 Diamond and 4 Star Resort, The Greenbrier in West Virginia.
Chef Mimi’s passion for creating led her to launch her own custom cake culinary venture, Lux Cakery, LLC. As a self-taught baker, she uses her culinary knowledge, experience, discipline, integrity, and creative drive to support her growing business.
Chef Mimi has been privileged to create custom cakes for celebrity clients such as Dwyane Wade, Udonis Haslem, Justice Winslow, Teyana Taylor, Letoya Luckett, Diddy, Fredo Bang, French Montana, Rick Ross, Amare Stoudemaire, Pouncy Brothers, Bobby Lyte, Yo Gotti, - just to name a few.
